It wasnsid red <br /> potentially hazardous once it was sliced and diced especially the.vegetables. <br /> Mr. Harrington continued by stating that the other repeated violations that they had <br /> found in the last three inspections were also that the prep case was not beeping the <br /> material cold enough. The food in the wally-ins was not kept "'off of the floor. The <br /> back screen door was open-. Those were repeated violations that were found on <br /> previous inspections in 2003 and 2004. He and Ms. wa'rd n had had other issues <br /> back in 2002. They had issued them orders to clean up things within a two-week <br /> period. They could have complied with that. But, it was a reasonably long list also <br /> back in 2002. They did not find it critical enough to close them down. There were <br /> enough smaller violations,probably, to do that. They opted to give them enough <br /> time and they complied with that. But, felt that it was worthy enough to let the board <br /> know whatwas going on. <br /> 1s. Grady asked if they were aware that the prep cooler was not beeping things at <br /> the right temperature. <br /> Mr. Heston stated that he asked his son today about that. He was surprised at that. <br /> He had cheeped it yesterday and it was keeping the right temperature. He was not <br /> too sure. while Mr. Harrington was there they turned the temperature down again. <br /> Tonight, after he left it was at 3 7. It definitely needed to be cheeped to make certain <br /> that turning it down more was enough to solve a problem. That was the first time <br /> knew of that. Like he said, when Josh checked it yesterday it was down and tonight <br /> it was down again. Perhaps, turning the thermostat down it solved the problem. He <br /> realized that they had to solve the problem. He thought that as of now it solved it <br /> tonight. <br /> Ms. Grady asked if it was the first time since October 1 'h 2004 that they tried to do <br /> anything to even check the temperature even though the board had brought this t <br /> their attention. <br /> Mr. Heston stated that he was not there all ofthe time. He was seldom there. Josh <br /> would have to answer how often he checked the temperature. <br /> Mr. Josh Heston replied that he checked it daily. <br /> Ms. Grady countered that it never was a problem exceptWhen' the board's health <br /> agents went out to inspect. <br /> Mr. J. Heston stated that he had nearer noticed it not working properly before. It may <br /> have been that when they cleaned the reach-in the thermostat had been rubbed with a <br /> rag and turned up possibly. <br /> Mr. Santos asked if they had a thermometer in there at all tines. <br /> 4 <br /> 12 <br />
