Steven Ball: May I suggest that we close the Public conversation and address the issues amongst the
Board members'
Glenn Santos: Are there any other c rr ments' If not, do I have a motion to close the public
conversation'
Steven Ball: '1 move that we close the Public conversation and address the issues amongst the Board
members. Lucy Burton seconded the motion. All agreed.
Steven Bail: I think we will add rens the October 13 th oo notice, and in the statement go two ways. We
can-address the critical violations, or if you read 'I, it says we can suspend their' license at any time for a
certain amount. So I think we should talk about those Nvo Issues and how you wa' nt to proceed. For
myself, I think the suspension of a license is kind of harsh at this time during the peek of the season, but
ars far as the 5 violations I think we should address th.e issue. i was thinking, ghat is the minimum, Glen,
as far as violations...
Glen Harrington: first violation is$100, second offense is o per offense.
Steven Ball: All right, so what do we consider this, a first offense or a second?
Glean Santos: A second, as he is on probation.
Glen Harrington: -Second offense*
Steven Ball: And last time you were in front of us in October there was a Soo fine. So w
. e have
violations-.and the minimum would be 'loo per violabon, that would be a oo fine. Oryoucould.goupto
oo per violation that would be $2500.
Lucy Burton: 1 am concerned that the Board made a decision last October and now we are not going to
follow through with what the Board decided last October. I do feel the sarnia way you do, it's hard in the
muddle of the season and w,e have an outline here, vire have Michelle who Glen has faith in, so I'r walking
a Tina here. If we don't suspend the license and go-with the fine,'I would feel very, very strongly that with
your suggestion that there be probation for another year but if they have to before us again for any
critical violations thea would be no more fines, there would-be suspension for sure, because that's whet
the Board laid out in October, and if it happens-again we can't keep fining and putting off the suspension, r
' r r
Glenn Santos: l agree with that, and it's going to be in writing. If there is another violation there will be
suspension for 6 months. I.don't care what time of year it is. We need to have that in writing. one other
thing, Glen, you had a good point and I know we did it with the Wall, they had a contract for a trainer to
come in onsite. That is needed here. Someone comes in weekly or biweekly and does inspections and
training. They did that for sic months.
Glen: We started out.doing inspections every 2 weeks but they carne back with a final decision that w a's
once a month for six months in-house training, one der for each of the first two weeks, and then they did
unannounced inspections monthly fora months. That was their probation.
Luc} Burton: Where does Mr. Heston find the trainers?
Glen Harrington: The State actually has a listing and in the case of the Great Wall it was Sara Wan who
was the teacher they had for the ServSafe, so that any of the people who were on the staters list as a
certified teacher for the ServSafe course are also food consultants that would be certified to do that, The
State reviews all the requirements that issue their ServSafe curriculum so I think we would be happy with
that. We can only state one person to do it but we can set the requirements that at least it be a certified
ServSafe instructor or food manager.
