Request for 2011 seasonal Food Establishment Permit: Smitty's Ice cream <br /> Glen Harrington commented that Smitty's was afforded a temporary permit as they purchased <br /> an existing seasonal business. Many improvements have been made to the property but only to <br /> the landscaping which brought it more into compliance with the approved site plan from before. <br /> The soft ice cream machines are dairy-based so they require cleaning every three days and <br /> sampling/analyses for coliform monthly. Mr. Richard Smith, own,er, made sure that the <br /> conditions approved for the outside service of ice cream were taken care of, specifically the <br /> water fountain, outside port-a-potty (handicapped accessible), covered trash cans and <br /> accessibility for the enclosed dumpster. sic employees are in Certified Food Management <br /> (CFIVI) training, but are not yet certified. The BOH final inspection was satisfactory. <br /> Richard Smith, owner of Smitty's Ice Cream introduced himself to the Board, and stated that he <br /> is familiar with the required care of the dairy-based ice cream machines but hasn't <br /> owned/operated one previously. <br /> Kai]iope EgIoff made a motion th 6t the Board approve the 2011 Food Establishment Permit for <br /> Smitty's Ice Cream upon receipt of the menu and CFM certifications. Burton Caplan seconded <br /> the motion. The motion was unanimously approved. <br /> 6. Request for 2011 Mobile Food Permit: Johnny farnpan 's <br /> . Glen Harrington stated that John Mllarcellini won the bid to be the food vendor at the town <br /> beaches. rA ServSafe certificate and menu have been provided. A preliminary inspection has <br /> been done on the mobile food trailer and it was acceptable. The trailer is the same one that <br /> was built for the Dog Waggin' and later used by Big John's Dogs at Echo Road. The trailer has <br /> an upgraded electrical system, has mechanical refrigeration, hot and cold.water, propane grill <br /> and microwave. Screens are available so that the unit can be fully enclosed. Glen stated that <br /> the cart meets the requirements for food preparation in the field. The operations at other <br /> beaches have not been fully discussed to date. <br /> John Il arcellino introduced himself to the Board, and distributed copies of pictures of the cart to <br /> be used. Mr. Marcellino stated that he is Food Management Certified, and his wife, who will be <br /> working on the cart, also plans to take the CFI I training course. IIIb. Marrcellino stated that there <br /> will be two other pond locations for the cart, and he plans to have two workers at the ponds, <br /> from the hours of 11. am to :00 pm, one to handle the food, and one to Dandle the money. 11I1r. <br /> M rcellino.will have the workers at the ponds go through the servsave Certification program. <br /> Kalliope Eglpff stated that there is a two hour training program for teenagers called "Food <br /> Handling is a Risky y Business, giving them tips on money and food handling and stated that <br /> Glen Harrington could provide information about-the program to Mr. Mllarcellino. <br /> Kalliope Eglofi:asked about the availability of a handwashing station at the two pond locations. <br /> Mr. Illlarcellino stated that he can use wipes, but will have water available for I'and wrashin . <br /> Burton Kaplan made a motion to approve the 2011 Mobile Food Establishment permit <br /> application submitted by John Marcellino alba Johnny I ampanoag, subject to final BOH agent <br /> inspection and a series of inspections during the summer.
