Glenn Santos and Veronica A. <br /> Warden <br /> THE TAPE IS NOT PART OF THE MEETING; IT Is FOR THE PURPOSE OF <br /> TRANSCRIPTION ONLY. <br /> Mr. Steven R. Ball, Chairman <br /> . SiM warrants. warrants signed. <br /> APPOINTMENT:TMENT: Great Wall Chinese Restaurant re: Food Code Violations <br /> Mr. Jian Hua Chen-was in attendance with his translator Ms. Alicia Tang for this <br /> scheduled appointment. <br /> Ms. Warden stated that upon her initial inspeetio of t ie Great wall Chinese <br /> Restaurant in April of 2000 she discovered food uncovered and thawing methods that <br /> were in violation of the food code. Her subsequent annual inspection on Dec em er 29, <br /> 20 00 revealed food in gats on the floor-, nothing covered, no sanitizer being used and <br /> food under the sink. She had them cover all containers of food immediately. The staff <br /> explained to her that with New Year's Eve coming up they were extremely Busy and <br /> shoat on storage space. Ms. warden indicated that she was very upset by what she <br /> saw at the restaurant and the fact that their food handing practices was not in <br /> compliance with the state food code. At the inspection she spoke with a Mr. Chen who <br /> was cooking at the restaurant. Mr. Chea indicated that he had taken the HAACP <br /> course; but the restaurant was still full of violations. IVIS. warden told the staff at the <br /> Great wall that she would give therm one geek to clean up and that she would be back <br /> the following week. On January 8, 2001 Charlotte Steiffel, Health Consultant f or the <br /> Board of Health, conducted a follow-up inspection and found not much improvement <br /> at the restaurant. <br /> IVIr. ol'ierty stated that there is no excuse for the lack obof improvement.at the follow-tip <br /> inspection. He stated that the Great wall is showing a flagrant disregard for thein <br /> customer's health and would recommend fining Mr. Chen $300.00 and requiring the <br /> Person In Charge to re-take the HAACP course. <br /> Mr. Santos questioned if Mr. Chen was aware of the regulations in place, as he is <br /> ultimately responsible for what his staff sloes. <br /> Mr. Cheri, through his interpreter, indicated that he is aware of the food code <br /> regulations. <br />
