The new form consists of all local, state, <br />and federal regulations and informing the restaurant owner what they need to do, how often they <br />need to send a sample to the lab for testing, what the PH level should be, at what temperature to <br />keep it and how long it can be kept for. The regulation would implement an electronic PH scale <br />as the current paper strips have expiration dates which are being overlooked. The electronic PH <br />scale would resolve this problem as well as making it easier for the businesses. <br />Mr. Virgilio expresses concern regarding the education part of the regulation and whether or not <br />they can receive some sort of documentation confirming that individual does have the knowledge <br />of these safety regulations. Mr. Seabury states upon application the business is required to submit <br />a HACCP certification, a ServSafe certification for any employee working with the rice, and <br />ensure there will be a ServSafe certified employee present at all times. In addition, the Board of <br />Health will require a demonstration to ensure the proper steps are being following. <br /> <br />
