MINUTES February 13, 1989 4 BOARD OF HEALTH <br /> Mr. McQuaid explained the process of cross-contamination, the im- <br /> portance of Cleaning the floor areas throughout the' etablishment and <br /> stressed the importance of placing shields On all open canisters . <br /> Mr. McQuaid stated iters that require immediate Correction are the <br /> P.H.F. temperature, P.H.F. shall be covered -and raw foods shall be stored <br /> below cooked foods. Mr. McQuaid stated all foods shall be kpet at least <br /> six inches above the floor and suggested a cleaning program be instituted. <br /> Mr. Costa stated this Board is Concerned with the amount of violations <br /> ( 107) and suggested the restaurant employ one person to institute a Cleaning <br /> procedure to ensure compliance with State and local requirements. <br /> Mr. Costa stated this Board will issue a written "Order of Corrections" <br /> to China Gardens and informed Attorney Cohen and Mr. Lai that all violations <br /> are -to be Corrected within ten 10days , during this time period a re-inspec- <br /> tion <br /> -insp - <br /> tion shall take place at the premises. f <br /> Mr. Costa exp-lained the license will be issued, however this Board does <br /> have the authority to rescind the license if compliance with the "Order f <br /> Conditions" does not take place upon re-inspection. <br /> Attorney Cohen stated Mr. Lai has assured hien that he will Correct the <br /> violations. <br /> County Agent Shaun O'Brien stated he has inspected the premises and is <br /> in agreement' with Mr. McQuaid as to the repeated violations. Mr. O'Brien <br /> concurs with Mr. mcQuaid as to initiating a program for food handling and <br /> Cieanliness, which would rectify the existing problems. <br /> At this time Mr. Costa motioned -to issue the "order of Corrections" to <br /> Mr. Vincent K. Lai , manager of China Gardens, these violations so stated on <br /> the "Order of Corrections' shall- be complied with ten days from this date <br /> of issue with re-inspection during this time e frame, Mr. Gree l i sh seconded <br /> all agreed. <br /> Note: At this time Mr. Costa hand delivered the "order of Correction" <br /> 'to Attorney Cohen. . <br /> Mr. reeli-sh motioned to issue the Food Establishment license to China <br /> Gardens for the calendar year 1989, Mr. Costa seconded, all agreed. <br /> Dote; At this time Mr. ,Costa hand delivered the 1989 Food Establishment <br /> license to -.Attorney- Cohen. <br /> NEW BUSINESS <br /> Mr. Costa. requested Mr. McQuaid & Nor. Evans -to establish a fee schedule <br /> for inspeCt.ions of repairs to septic systems.. <br /> Mr. Costa requested -Mr. McQuaid to establish a fee schedule for all <br /> Food Establishment inspect-ions beyond the initial re-inspection <br /> Being no furth r- bus i.ness Mr..
