t <br /> Mr. Ball asked how long the Great Wall was closed down. <br /> Mr. Harrington responded that they were closed longer than a week. They came <br /> back with a revised training plan that included two months of instructions and <br /> inspections, which would have put them out of business. So the board backed off on <br /> that approach. <br /> Mr. Ball asked if they wanted any further discussion. <br /> Mr. Santos didn't agree on suspending their license. He did agree with Ms. Grady. It <br /> had to be everyone in that store for SrvSafe certification at all times. They could <br /> still get to that point that you night have a new hire. That was well within the food <br /> code. His second point was that he wanted to sec some type of firm in house policy <br /> in writing explaining as to why this was not going to happen 'gain. He has worked <br /> with companies and was a manager himself, They could keep the doors open and <br /> keep the business running. If they were going to have a new manager he would have <br /> to be ServSafe certified. Any kind of training was going to make certain that they <br /> were going to have to be held to a very stiff standard. He would lite to see monthly <br /> reports on their inspections. The hoard was going to be doing their own. Any kind of <br /> confidentially within their company was not going to be a problem. He would like to <br /> see the first six-months. They do their reports and send the hoard a copy of it. It <br /> wasn't their job to baby sit. It was their job to protect the public with in-hos <br /> programs that hld their managers to it. The next time he would be in agreement <br /> with Mr. Ball. They would pull their license and who knew when it would be re- <br /> established. <br /> Mr. Harrington asked if he wanted the board to approvethe ire-house policies, <br /> Mr. Santos stated that they were discussing the revocation of the permit. This was <br /> his opinion. After corning out and helping the board-throw away the bad food. He <br /> made notes as to what he wanted to see. He agreed with the fine. Where they going <br /> to pull the permit? what were they going to do for a time frame if they did not pull <br /> the permit' <br /> Mr. Bowar suggested that they suspend selling the food service products, the hot <br /> sandwiches and the hotdog . <br /> Mr. Ball interjected that that was what he was going after. <br /> Mr. Bowar continued that that would be done until they got everyone Ser Safe <br /> certified. He would even feel comfortable going this route at this point if they could <br /> open the rest of the store to the other services. <br /> Mr. Santos was in complete agreement with that recommendation. <br /> 1 <br />
