The process with the food was a new program that they rolled. <br /> Stephanie was trained on the July ''d, 2004, on how to handle the process. It cane <br /> in from the McClain store frozen. It was supposed to stay frozen until they put them <br /> in the bias. It was marked seven days. Where was no chance that they would refill <br /> the bill before those seven days were up. As the bins go out, they stack theca up, <br /> defrost another seven days worth and put therm in the bins. They were kept in the <br /> cooler. The program was supposed to work that way. It obviously didn't happen <br /> here. They would have to re-train both employees of the store plus a number of other <br /> ServSafe people so Haat in the future if two people do go out. Theywouldn't run into <br /> this problem. He had fifteen spots at least going to the Ser Safe class in September <br /> and October. flus, Dean was currently taking the class. Going forward, they had <br /> marked all of the dates on there. When it came in from the store, he thought he saw a- <br /> copy of the sheets. There was a date that would shover the year and the day of that <br /> year that the sandwich carne in from the manufacture and when it was crude. They <br /> had 120 days from that date going forward. The policy was going to continue to be <br /> that when they come in they are automatically placed in the freezer and not defrosted <br /> until they go out for their seven clays. <br /> Mr. Santos asked Mr. Shultz if he was talking about the label he had in his hand. <br /> Mr. Shultz replied that that label shoved a stamp that said "4-266". That meant that <br /> it was the 266 1n day of the month of the year. He had a calendar for all of the <br /> employees that they could look to. <br /> Mr. Santos asked if the shelf life was 130 days from date of packaging to the date it <br /> gets discarded. <br /> Mr. Schultz stated that that was correct as long as it stayed frozen. If it was-defrosted <br /> then it was only seven.days. That was shared at the training that they had in July. <br /> But, it obviously dict not get through to some of the employees. <br /> Mr. Ken Bowar, operations manager,joined the conversation. He was in charge of <br /> overseeing all'of the operations. He wanted to talk a little bit about the training. <br /> They did, for this new rollout that occurred in August, bring in a professional trainer <br /> for some of their other major food operations down in Charlotte. They conducted <br /> four hour training for every employee-that was going to handle this product <br /> including the two employees that were in this store. It was very frustrating for there <br /> to have gone through the expense of bringing in these trainers and conducted this <br /> training to still have this type of incident to happen.
