1 A ti
He wanted to make sure and to assure the board that they don't want this situation t
happen again. They needed to learn from this and figure out where their shortfalls
were in training and go back. Thiswasn't just for Mashpee but for all of the places
in New England where they were serving the product. They needed to do some
validation of the training. It needed some periodic reviews to make sure things were
done properly. They have a lot of turn over in this business. obviously, the Iashpee
case is a clear ease of that. They needed to have a system that survives a turnover o
employees. That was one of the reasons why he wanted to coxae today in order to
hear all of the issues and how they could address them.
Mr. Shultz added that he had stopped serving these sandwiches in all of the other
Cape stores that he had so that he could re-evaluate who had been trained and who
understood the training. He wanted to make sure that they had people to put these
sandwiches into these ovens and serving them the right way so that people weren't
getting sick. He had stopped in all of the stores so far.
Ms. warden wanted to see oh top of training to get things set straight. She wanted
the directions posted on the walk-in when you walk in. She wanted therm laminated
so that they couldn't be ripped or torn off.
4
Mr. Shultz stated that they did have laminated directions. It was on the actual oven.
It was not on the walk in. They could probably make copies and laminate them.
Mr. Bowar they had what they called Job aides as part of the training. They
developed very simple easy to follow laminated step-by-step processes that if the
employees if they were unsure and did not know what to do they could refer back to.
Mr. Harrington interjected that Beverly and Stephanie shored those to him when
they were trying to figure out the dates. They-showed him that the 130 days out was
the longest you could hold the food for. But, they couldn't tell him'what the date was
as far as the date stamping on the box. They all kind of...
Mr. Bowar stated that he would definitely take that information back as ars area that
they needed to focus in on.
Mr. Harrington felt that they needed to make sure that the boxes get labeled once
they were taken out of the freezer because that actually changes things. The dates
that were on the boxes were the delivery dates and if they were now going to put
them into the freezer.
Mr. Shultz interjected that those boxes should go right into the bins and not
even...the date that was on there should let there know that there was no more than
seven days from the freezer. They were not to go near the refrigerator.
Ms. warden agreed and added that that was one of her concerns too. They could go
out of the boxes and into the bias. Now they were counting this as the first holding
