f
5 ;
date. They did not understand that that had already been holding for several days.
That was an extremely important point.
Mr. Shultz stated that there should not be any product in the refrigerator other than
the stuff that was in those bias. Everything else should be in the freezer and marked
s that there was no way to confuse it.
IVIS. warden stated that they weren't using the freezer out back. There was nothing
in it.
Mr. Shultz stated that everything was in the freezer now. Everything in the
refrigerator was thrown out even the stuff that had carne in on the last delivery.
Everything was chucked and they were starting new. The process would be to put
thein in the bins with re-training so that everyone understood.
IVIS. warden suggested that each staff member and any future staff`member
especially the current ones. That if they split it up for two days. They would do two
four-hour trainins with a test. Even if it was repetitive. what they did with another
restaurant in town was make therm retain a person who was a certified.SrvSafe
teacher come in and teach all of the employees. It wasn't a full three-day class. They
oversaw the people and sat there with thein for a specific time and an amount of
months teaching diem. Of course you talking a category three with a lot of
potentially hazardous foods. But, with you folks perhaps with thein coming in a
repetitive manner. Any subsequent person, the four hours was not long enough and
she felt that they had a tendency to forget half of the t hire. Dean was a prune person
too. She asked him and she could tell that he was wracking his brain. He couldn't
remember haw to read that code. That was what was so important about posting it
also. It was a simple procedure. It was her recommendation to the board.
Mr. Shultz stated that he could probably add that to the checklist that the managers
were supposed to do once a week and the territorial managers were supposed to do
once a month.
Ms. warden suggested that if they use incentives they might get a better result. For
example, give the person who gets the date the quickest a reward. Flake it a game so
that it makes it worth thein while to keep with it.
Mr. Shultz agreed with her recommendati n.
Mr. Ball stated that they all knew how he felt about this. He was not happy about `
this. He would life to move forward with fines and the possibility of revoking their
license. Did they want to talk about that? He didn't know exactly how much they
could fine them or what exactly they could do. was it a$300.00 or a $500.00 fine
per day or could they revoke their license and for how long? They had been here
with these people before with other issues. It just didn't seem to end. Legally, how
much could they issue a fine for?
