3 <br /> Mr. Doherty asked what the problem with that issue. He asked if the coolest spot on the <br /> cooler is down low and the heat rises? He was trying to get this information out in the <br /> open for those of us who don't understand why it shouldn't be on top. <br /> Ms. Warden responded that that was not the problem. The bacteria from raw meats can <br /> fall onto the open containers thereby contaminating the vegetables or anything beneath <br /> them. <br /> Mr. Ball then asked what the temperature of the eggs should be. <br /> Ms. Warden replied that the normal temperature for eggs should be 40 degrees or less. <br /> 4. The water in the floor in the walk-in. She opened the door and there <br /> was water on the floor. She questioned what it was. They replied that <br /> the vegetables come and there is ice on them. The ice dissolves and <br /> there is water on the floor. The problem being is that the cardboard <br /> boxes are soaking wet and vegetables were on the floor. There were not <br /> 6" above the floor. Mr. Harrington did examine the boxes. He noted that <br /> the boxes did have a wax coating on the boxes, which should help <br /> prevent any contamination. But, they should be kept 6" off the floor. <br /> Cardboard is a permeable barrier. <br /> Mr. Harrington interjected that the vegetables are not wrapped inside. <br /> If they were individually wrapped it would be different. The product <br /> itself is open. <br /> Mr. Doherty interjected that regardless it shouldn't be on the floor. It <br /> should be up to the minimum. <br /> 5. Again, no sanitizers are being used. She had gone in there many times <br /> and seen a bottle of bleach beneath the sink. She'd look around and <br /> there would be no sanitizers being used. She had a feeling that they are <br /> not using the soap and water to wash some of the buckets. You would <br /> look at these huge containers. She questioned them and said, "If you <br /> are using the sanitizer how much are you using?" Again, as Mr. <br /> Harrington had stated that they responded that they were using a <br /> quarter of a quart. She didn't even hear that answer. She understood <br /> them to say that they were using a quart per five-gallons. If they did do <br /> that they would be burning their hands right off. They can't put that <br /> much bleach in the sanitizing solution. They would hesitate in <br /> answering her question. That hesitation caused her great concern. <br /> 6. The next issue was no wiping clothes. After the agents arrival wiping <br /> clothes appeared out of nowhere. They were dry and weren't being <br /> used. Again, there was no sanitizing solution to be found in the area. <br /> 7. The ladies room had no paper towels. The "Employees Must Wash <br /> Hands" sign was broken off. She did provide them with a new sign. <br /> 8. When she asked Mr. Chen to show her where he was keeping the <br /> bleach. She assumed that he must have had a lot of bleach because he <br />
