2 <br /> Mr. Doherty continued by stating that the lack of knowledge of proper procedure was <br /> not an issue here. <br /> Mr. Harrington continued that when they spoke with the person in charge at the <br /> moment, Christy Chen. He even went over the use of the sanitizer with her. He wasn't <br /> sure how much of his instructions she comprehended due to the language barrier. It <br /> was clear that sanitizers were not being used. There were no wiping buckets with the <br /> sanitizers or the sanitizer cloths on the shelves. Both Mr. Harrington and the Ms. <br /> Warden asked Ms. Chen and Mr. Chen how much bleach they were actually putting in <br /> the sink to sanitize the utensils. They were saying a "quarter of a quart" when in fact it <br /> only takes a couple of capfuls. They were either not using it or over-using the amount of <br /> bleach as the sanitizer. But,just the fact that the cutting boards and the other surfaces <br /> where not being sanitized. They had improper storage of eggs. There were thirty dozen <br /> eggs stored in the closet just with no refrigeration at all. That along with the items that <br /> are on the inspection list caused them to feel that they should bring this to the BOH's <br /> attention. Also, that there should be some other type of remediation because of the fact <br /> that what they were doing in the field was not bringing about the expected results. <br /> Mr. Ball then asked the Mr. Doherty if he could ask a question. <br /> Mr. Doherty replied that he could certainly do so. <br /> Mr. Ball then asked Mr. Doherty that when it was time could they go through the whole <br /> list of items on the inspection form. <br /> Mr. Doherty agreed to that request. Then he continued by stating that essentially the <br /> purpose of their meeting is that the BOH has three options in regards to the emergency <br /> order closure: <br /> 1. The closure order could stand. <br /> 2. The closure order could be withdrawn. <br /> 3. The closure order could be modified. <br /> Mr. Doherty then stated that the closure order would probably be modified to some <br /> extent. That being the case then the BOH is going to have to determine what type of <br /> remedial action the Board feels is appropriate given the offenses listed. Mr. Doherty <br /> then recommended that they go down the list one by one. We'll make them brief. But, <br /> we will put them all on the record. <br /> Mr. Harrington stated that he was going to have Ms. Warden read them because it was <br /> in her writing. <br /> Ms. Warden had her copy available. She then began by stating the following: <br /> 1. The food in the coolers was uncovered. <br /> 2. The eggs were left out and the temperature on the outside of the shell <br /> was 66 degrees. Ms. Warden discarded the eggs. <br /> 3. The food was improperly stored in the refrigerator in one of the cooler <br /> sections. The raw meats were stored above open vegetable containers. <br />
