She wanted a thermometer in the refrigerator In order to <br /> meet the food code standards. she returned the next day and he had <br /> completed exactly ghat she had asked of him. Everything had been <br /> placed in the pans. He met the code the next clay. She still felt that this <br /> was questionable. <br /> Mr. Harrington asked if Ms. Sherri Bernhardt, the holder of the Servsarfe <br /> Certification, was present. <br /> Ms. Warden confirmed that IVIS. Bernhardt was present. <br /> Mr. Ball asked if she had given him a warning. <br /> IVIS. Warden stated that she wrote him up on the inspection form. she <br /> quoted from the form, "Potentially hazardous food must be kept at 40 <br /> degrees or 140 no later than four hours. Keep potentially hazardous foods <br /> in a clean container cooler. This is not acceptable." It was real warm and <br /> the temperatures were at the time okay. However, he was not planning <br /> on keeping them that way. They straightened that out. Again, they <br /> arrived in a haphazard condition. She did give them a good half hour to <br /> set up and get everything going. she finished her inspections and <br /> returned to their food stand. He was gabbing all of the sausages, getting <br /> ready to put them on the grill and he had his hands in the cooler* she <br /> looked over to insure that he had gloves on and he did, she did tell him <br /> that he could no longer transfer potentially hazardous foods in that gay. <br /> IVIr. Ball asked what type of violation that would b . Was it a critical <br /> violation? <br /> Ms. Warden replied that it was a critical violation. <br /> Mr. Ball asked if it warranted a fine. <br /> . Another concern was <br /> not that the advertising was for DiMaggio's. It was not for the VFW, This <br /> was a non-profit agency and the stand was under a different name. she <br /> was a little perturbed over that fact. If it was the VFW then there should <br /> have been some indication that it was the VFW selling the food. <br /> IVIS. Grady asked if it had been approved for the VFW. <br /> Ms. Darden replied that they had applied for the Oktoberfest permit. They <br />
