. 4
4
were going to meet with them. she and Mr. Harrington made a decision to
let Mr. Dillrflaggio open for this one event under a catering license until it
carne before the BOH members. He had catered the special events on
July *", 2002. He seared hamburgers, hot dogs and sausages. He did not
have a license for that event. He had a license for the food establishment
selling Ice cream only. Food vendors are under the impression that once
they are issued a catering license that it is all inclusive of anything from
potentially hazardous foods down. It is a mistake and a
misunderstanding. They did straighten this out with Mr. D!Maggio. Her
problem is that if it is going to be the VFW then it should have a VFW
sign. To place it under his own name indicates that it is not for a non-
profit agency. It was obviously up to the board. she just wanted to relay
the details of what happened.
Mr. Harrington stated typically if they didn't correct it at the time of
inspection then they would issue a fine. If there were three critical
violations during the inspection they would do a re-inspection within
twenty-four hours or seven days just to rake sure that they are not
continuing with the critical violation. if there are three critical violations
and they are continuing critical violations they will drag them before the
board.
Mr. Bell reiterated that at this time the board wouldn't take any action.
IVIS. Warden stated that it was difficult day. It was pouring. It really
wasn't a good day for the Oktoberfest. Everyone was boiling food in the
rain. It made it a very hard time to inspect the facilities.
Mr. Harrington felt that what it brought to light was that it was time to
set some criteria for the catering permit.
Ms. Grady asked if the food vendors receive literature with the catering
permit that states what the guidelines are for this type of permit. Is that
ghat Mr, Harrington was saying needed to be developed?
Mr. Harrington replied that the catering permit still requires a servsafe
certificate. if IIIb. DiMaggio was going to be the frontrunner on this permit
the board has every right to go to the class. Right now IVIS. Bernhardt is
the certificate holder. she was present at the oktoberfest, she holds the
liability for the food code.
Nis. Grady asked whom the license was issued to.,
ilrfls. Warden replied that you could cater from a licensed food
establishment. They couldn't cater from a home.
