He <br /> wasn't trying to duck out of doing the system for whatever willy-nilly reason. He <br /> would do thing if he could financially coo it. He was sure that the inspectors would <br /> tell him that he has run a clean establishment. Cleaner than most in this town h <br /> would argue. He's been to other establishments in this town where they may no be in <br /> violation. But, they had not made the obvious same effort that he had tried to do. He <br /> has tried to play by the book. He had cleaned up the kitchen a lot. He brought it u <br /> to code as best he could. He runs a clean establishment. There had not been a single <br /> complaint about his establishment. He ran it clean. He would love to put this thing in <br /> and be in' compliance. If he thought that there was some way to get a loan to do it. <br /> He would. They had explored every financial avenue and it wasn't something he <br /> could make happen right now. He neded to weather the wirer. Hopefully pay the <br /> mortgages and thea on the other side of the winter if they could put a couple of <br /> buts together to get the system done. They were not trying to say that this was <br /> anybody else's fault but their own. He was not trying to blame m the Mills.-"Whey were <br /> not trying to blame the engineer. They paid the engineer to do the job and he did it. <br /> He wished it had,come sooner to the board than it did. They put in a request for it <br /> and it got done. He didn't know what else to say other than that they didn't have the <br /> financial where for all to make this happen. He would levo to make it happen. H <br /> wanted to be in compliance. He thought he had demonstrated that with everything he <br /> had done at the restaurant. He tried to comply with everything that the Board o <br /> health required of the restaurant and more. He tried to be as clan and friendly a <br /> restaurant as could possibly be run. Maybe to the.detriment of his finances. Maybe <br /> there were corners he could have cut to make better money. He didn't-cut them. He <br /> bought the best saniti ers and soaps that he could by. He raga that machine up to the <br /> temperature that it was supposed to be run at. Everything Haat should be stainless is <br /> stainless steel. He was sorry if Mr. Santos-had interpreted anything he night have <br /> said as derogatory towards either the engineer or the any member of the board. <br /> Mr. Santos was glad that he clarified that but they needed to stick to installing the <br /> system. He was basically saying that this was not going to happen. How long was it <br /> going to take? He was not trying to speak for Ms. Grady, only for himself. What <br /> were they talking' one year or two ears? whenever he could come in and tell us he <br /> was ready? <br /> Mr. McNulty stated that he was certainly not hoping that it was going to be two <br /> years. He could not explain why business was so slow this year. He would <br /> graciously ask for twelve months. He wanted until next Labor Day to try and turn <br /> this thing around. He was cutting labor and working 16 to 20 hours per day, himself, <br /> seven days per week. He tried to cut labor down to the bone. He hated laying people <br /> off. He would lore to keep theca. He was trying to stay open through the winter so <br /> that he didn't have to lay people off and he could keep paying their mortgages. He <br /> was doing everything in his power to try and turn this restaurant around. He didn't <br /> want to leave it or for it to be a failure. He wanted to be in compliance with the <br /> board's request. <br /> a - <br /> 2 <br />
