4. Request for Revised Food Permit — 13 Lake Avenue, Naukabout Beer Company, LLC. Mr. <br /> Harrington commented that Peter Murner, proprietor of Naukabout Brewery, has submitted an <br /> application which proposes to utilize the upstairs space at his food establishment/brewery at 13 <br /> Lake Avenue as a prep area, and to also construct a permanent onsite food trailer as a <br /> cooking/finishing area. Naukabout has an existing food establishment permit, and all Allergen <br /> Awareness and ServSafe Certifications are current. Mr. Murner plans to maintain the existing <br /> food menu, with the addition of donuts and coffee. The equipment and floorplan for both the <br /> prep space and food trailer have been reviewed,with no issues,and the required Building permits <br /> have been pulled. Town water will be utilized throughout the building and in the proposed trailer. <br /> All waste from the food trailer will be discharged into the onsite grease trap. <br /> Peter Murner, of Naukabout Brewery, introduced himself for the record and stated that Mr. <br /> Harrington covered everything, and that he would appreciate the opportunity expand their food <br /> offerings. <br /> i <br /> There being no further comments or discussion, Ernest Virgilio moved to approve the revised <br /> permit pending an inspection by a Health Agent prior to operating each of the new areas. Motion <br /> seconded by Kripani Patel. Roll call vote: Ernest Virgilio (yes); Kripani Patel (yes); Brian <br /> Baumgaertel (yes). VOTE: Unanimous(3-0). <br /> 5. Review of Unpermitted Septic Repair—10 Aries Lane. Mr. Harrington requested a continuance <br /> on this matter. <br /> There being no further comments or discussion, Ernest Virgilio moved to continue the matter of <br /> the unpermitted septic repair at 10 Aries Lane to the next meeting. Review of Food Code Violations—26 Steeple Street, Estia. Mr. Harrington commented that, on <br /> June 9, 2021,the Mashpee Fire Department notified the Board of Health that a third ventilation <br /> hood had been installed at Estia Mashpee, a food establishment located at 26 Steeple Street, in <br /> Mashpee Commons. The Mashpee Board of Health performed an inspection on June 9, 2021 at <br /> 3:00 p.m. Health Agents confirmed that the ventilation hood had been removed and the access <br /> to the ventilation was in the process of being sealed. The food establishment was operating, but <br /> with the cook line and main kitchen closed, and a limited menu of pizza and salads being offered. <br /> On June 10, 2021, a follow-up inspection was performed to verify that the food preparation area <br /> was returned to a clean and sanitary condition prior to re-operation. The in-field inspections were <br /> performed to witness the conditions of the food establishment. A letter was prepared to outline <br /> the administrative violations associated with the unpermitted installation of the ventilation hood. <br /> Mr. Harrington reported that four sections of the Food Code were violated by the operator of the <br /> food establishment. <br /> Nicholas Markantonis, owner of Estia, introduced himself for the record and stated that this <br /> expansion plan has been going on for a year, and it was not their intention to side-step the <br /> permitting process. He described the potential fire hazard that previously existed at the <br /> establishment, which led to the urgency of installing the third hood. Mr. Markantonis reported <br /> that the hoods are cleaned three times a year, but he reported that the company they hired never <br /> actually performed the most recent cleaning. <br /> 3 <br />
