11 <br /> Mr. Harrington stated that two people were there that were certified and even though <br /> Cindy wasn't there and there was a new chef. The two people that were certified didn't <br /> speak up to say look we can't do it this way. <br /> Ms. Chen stated that the other people are going to follow the direction of the chef. <br /> Mr. Harrington understood that however this is something Christy should know and fix <br /> herself. If she goes in and sees raw meat above prepared food or open and raw food, <br /> that could be changed. The health agents would never see that coming in on an <br /> inspection. But, those things are still aren't happening. <br /> Attorney Neelon interjected that that may be where they are running into a bit of a <br /> cultural issue. Ms. Chen may have the certification being the daughter of an owner. <br /> But, dealing with males in the kitchen she is going to be challenged. <br /> Mr. Doherty interrupted the conversation by stating that he didn't want to say that, to <br /> be honest with him, because the owner was sitting there. However, it did cross his mind <br /> that the chef or owner is going to say that, "you are the woman and I am the man." That <br /> is not right. <br /> Mr. Harrington interjected that Mr. Chen is the owner. He is there and certified. <br /> However, things are still showing up. <br /> Ms. Warden stated that what Mr. Harrington said was the whole point. Mr. Chen and <br /> Cindy were certified. They were standing there and working in the kitchen area. <br /> Mr. Doherty asked if Mr. Chen was there. <br /> Ms. Warden replied that he was along with Christy. <br /> Attorney Neelon then reiterated that Mr. Chen is just coming back from all of this <br /> illness. <br /> Mr. Ball asked if the old chef that they fired. He was the boss and no one can stand up <br /> against. He was the man and the person in charge. <br /> Ms. Chen replied that the old chef was in charge but he was uncontrollable. She didn't <br /> know what happened. When she came back to the restaurant and asked Christy what <br /> was going on. Christy said that the chef was uncontrollable. <br /> Mr. Ball continued by stating that if the old chef didn't feel like doing it then it wasn't <br /> done. <br /> Mr. Doherty then stated that they were not going to dictate who they were going to hire <br /> or not hire. He continued by stating that the chefs were going to have to be reasonable <br /> and they were going to have to be able to control their employees. Ultimately all of the <br /> responsibility falls back on owner. They will take action against the owner. <br />
